Diego Galicia is co-chef and co-owner of Mixtli in San Antonio—along with his business partner, Chef Rico Torres. The two have been regularly recognized and praised by critics as leaders in the culinary community in San Antonio and nation-wide. Born in Toluca, Mexico, in 1984, Galicia moved to San Antonio in 2002. He studied psychology in college before switching to culinary school and graduating from The Culinary Institute of America (CIA) in San Antonio. Galicia worked at the best restaurants in San Antonio as well as modern Michelin-starred temples Atelier Crenn (SF) and Moto (Chicago). At Mixtli, the menu rotates quarterly from region to region, offering a gastronomical tour of Mexico.
